Aunt Marilyn’s Easy Marinated Roast

Sprinkle a 3 to 4 lb. brisket or rump roast with garlic powder before placing in a marinate of:

1 can beef consomme

1/2 bottle soy sauce

1 1/2 tbs. liquid smoke

1 1/2 tbs. lemon juice (Fresh from Florida!!!)

No need to use salt, there’s plenty in the marinate. Cover tightly with foil, refrigerate overnight. Turn meat once while marinating.

Cook in a 250* oven for about 5 hours. If there are any leftovers it makes great sandwiches.

THE Chocolate Cake

2 c. sugar
1 c. water2
c. flour
2 eggs
1/2 tsp salt
1 tsp soda
1 stick butter
1/2 c. buttermilk
1/2 c. oil
1 tsp vanilla
2 sq unsweetened chocolate

Combine sugar, flour and salt in one bowl.  Bring to boil the butter, oil, chocolate and water. (4 minutes in microwave).  Add to dry ingredients, then add eggs, soda, buttermilk and vanilla.

Pour in greased 8 1/2 x 11 1/2 inch pan.  Bake in preheated 325 degree oven 45-50 minutes.

Frosting:

1 stick butter
1 tsp vanilla
2 sq chocolate
1 box confectioners’ sugar

6 tbsp. milk
1 c. chopped pecans

Melt butter, chocolate and milk.  Add vanilla.  Add to sugar. Stir in nuts.  Spread on hot cake.

Beef Stew

2 pounds stew meat, cut into bite size pieces.

1 large can diced tomatoes (#2 1/2)

Vegetables: potatoes, small onions, celery, carrots

5 tsp minute tapioca

Place meat in pot and season with pepper, garlic powder.
Add cut up vegetables and canned tomatoes. Add minute tapioca and mix well.
Cover and bake slow (275 degrees) for 4-5 hours or until vegetables are tender.
Remove from oven and top with favorite cheese to melt before serving.

Sirloin Tip Roast or Eye of Round Roast (3 ½-5 pound)

Marinade:

1 cup burgundy

1 cup salad oil

2 Tbsp. Worchester sauce

¼ cup ketchup

2 Tbsp. Sugar

2 Tbsp. Red wine vinegar

Place roast in plastic bag.
Mix marinade and pour over roast.
Place in refrigerator for 6-24 hours turning several times.
Grill or roast in slow oven (325 degrees) until meat thermometer reaches desired doneness. Let stand 15 minutes before carving.

Meat Loaf

1 pound ground beef

1 egg, slightly beaten

½ cup ketchup

½ cup quick oats

½ cup milk

Place beaten egg in mixing bowl followed by ground beef, broken into chunks. Season meat to your preference (pepper, garlic powder, etc.)
Add other ingredients and mix together.
Place in pan in loaf shape.
Bake at 350 degrees for 30-40 minutes.
Remove from oven and top with favorite cheese to slowly melt before serving.

French Dip

4 pound rump roast

1 can beer

1 can beef consume

1 can French onion soup undiluted

Trim all fat from roast and put roast in crock pot. Pour the other ingredients into crock pot. Cook on low 6 hours.
